HURON — The Huron Farmers Market will again be at the Huron Mall parking lot on Saturday.
It will be located on the west side, with ample parking in the lot and patrons are asked to please not park on the highway.
Organizers appreciate all who brave the rains and wind and hopefully by Saturday the morning will be calm and dry.
Here is a recipe using ingredients from items found at this week’s market.
Marinated Cucumbers, Onions and Tomatoes
3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 tsp. salt
1 tsp fresh coarse ground black pepper
1/4 cup oil
Combine all ingredients in large bowl and mix well.
Refrigerate for at least two hours before serving and enjoy!.
Produce at the market Saturday will be: tomatos and cherry tomatoes, cucumbers, farm fresh eggs, asparagus, a variety of sweet breads, lettuces, kale, jams, jellies, cabbage, zucchini, porridge, rye, whole wheat and white breads, cinnamon rolls, cookies, Swill Chard, rhubarb, onions, homemade soaps, honey, hand cream and lip balm, beets, birdhouses and so much more.
Gift certificates are available for that “hard to buy for” person.
