Huron Noon Lions and Huron Eye Opener Lions Clubs are gearing up to host the 61st Annual Pancake Day on Tuesday and Wednesday, April 25 and 26, from 7 a.m. to 7 p.m. in the Expo Building on the S.D. State Fairgrounds.

Ticket Sales began on April 1. Lion members have tickets for sale, please contact your favorite Lion to purchase your tickets. If you do not know a Lion, call one of the Lions listed at the end of this article.

Proceeds from this major fundraiser have or continue to support the following projects: South Dakota Lions Foundation, Dakota Sight and Health,  Camp Gilbert Diabetes Youth Scholarships, Huron Public Library, Huron High School Senior Scholarships, DEX Building, S.D. The Best Pancakes
In large bowl, beat together:
    2 Tablespoons oil
    1 egg
    1 cup milk
Sift together:
    1 cup flour
    2 Tablespoons baking powder
    2 Tablespoons sugar
    1/2 teaspoon salt
Add dry ingredients to liquid ingredients, blending well. Fry on lightly oiled griddle. Makes 8.

Raspberry Apple Salad
    2 3-ounce packages raspberry flavored gelatin
    2 cups boiling water
    2 10-ounce packages frozen raspberries

    2 cups applesauce

Topping:
    Whipped topping

Dissolve gelatin in boiling water. Add raspberries, stir until separated. Stir in applesauce. Pour into mold, if desired. Chill. Spread whipped topping on top of salad before serving. Serves 10-12.

Chicken and Broccoli Casserole
    6 to 8 chicken breast halves
    2 packages frozen broccoli
    1 can sliced mushrooms
    8 ounces sharp cheddar cheese

Sauce:
    1 can cream of chicken soup
    1/2 cup mayonnaise
    1 Tablespoon curry powder
    2 Tablespoons lemon juice
    2 Tablespoon Worcestershire sauce

Remove bones and skin from chicken breasts. Layer in bottom of baking dish. Steam broccoli and add to baking dish. Prepare sauce and pour over broccoli and chicken. Add sliced mushrooms and cheese. Bake at 350 degrees F for 30 to 40 minutes. Serves 6 to 8.

Egg Pancakes
    5 large eggs
    1/4 cup sugar
    1 cup milk
    1 cup flour

    1 Tablespoon oil

Beat the eggs well and add remaining ingredients; mix well with electric mixer until smooth. Pour about 1/4 cup batter onto lightly greased, preheated pancake pan. Tilt pan to spread mix. When dry around the edges, flip pancake. Makes a very thin pancake, similar to a crepe.

Hamburger Hot Dish
    1 pound hamburger (browned)
    2 cups sliced, raw potatoes
    1 cup celery, cut up
    1/2 cup sliced onion
    2 cups tomatoes
    1 can pork and beans
    1 1/2 teaspoon salt
    1 1/2 teaspoon pepper

Layer ingredients in order they are listed. Put pork and beans on top and bake at 350 degrees F for 2 hours.

Alvina’s Fruit Salad
    8 ounces sour cream
    1/2 cup brown sugar
    8 ounces whipped topping
    15-ounce can crushed
    pineapple, drained
    3 cups green grapes

Mix sour cream and brown sugar together, fold in whipped topping and then the fruits. Chill until ready to serve.
