Huron Noon Lions and Huron Eye Opener Lions Clubs will be serving up pancakes for its 62nd annual Pancake Days continuing today, April 24, from 7 a.m. to 7 p.m. at the Expo Building on the S.D. State Fairgrounds.

Tickets are available at the door. Everyone is invited to come and share a meal with friends.
Proceeds from this major fundraiser support the following projects: South Dakota Lions Foundation, Dakota Sight and Health, Camp Gilbert Diabetes Youth Scholarships, Huron Public Library, Huron High School Senior Scholarships, DEX building, Sheep Shed, S.D. School for the Blind and Visually Impaired, Huron Salvation Army, Jan Manolis Family Safe Center, Fishing 4 Families, Huron Police Department, National Safety Council, Shrine Circus, Nordby Exhibit Hall for 4-H youth and community, Plus One Pregnancy Guidance Center, Make-A-Wish, Boy Scouts, Huron Red Cross, Leader Dog, Huron Park & Recreation, Relay for Life, United Way, Ski for Life, Huron Post Prom and to provide vision screening.
Old-Fashioned Oatmeal Cookies
1 cup margarine
2 cups dark brown sugar
1/3 cup sour cream
2 eggs, unbeaten
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1 teaspoon vanilla
1/2 teaspoon salt
2 cups oatmeal
2/3 cup walnuts
2 1/4 cups flour
1 cup raisins
1 teaspoon soda
1 teaspoon baking powder
Mix all ingredients. Drop from spoon onto cookie sheet. Bake for 12 minutes at 350 degrees F.
Mexican Hot Dish
1 pound hamburger
1 small onion
1 can Mexican-style chili beans
1 can tomato soup
1/2 teaspoon chili powder
Brown hamburger and onion, drain. Add the rest of the ingredients and heat until warmed through. Serves 12.
Lasagna
1 to 2 pounds hamburger
Onion
Salt and pepper
1 can tomato
1 can tomato soup
1 teaspoon garlic powder
1 teaspoon oregano
1 box lasagna noodles
4 ounces mozzarella cheese
Parmesan cheese
Brown hamburger with onion and salt and pepper. Drain. Add tomatoes, soup, garlic powder and oregano. Simmer 20 minutes. Cook noodles 15 to 20 minutes.
Put layer of sauce in 9-by-13-inch pan. Cover with a layer of noodles, alternating until the sauce and noodles are all used.
Cover with mozzarella cheese and sprinkle with Parmesan cheese. Cover pan with foil. Poke fork holes in the foil. Bake at 350 degrees F for 30 minutes.
Caramel Bars
2 cups flour
1 egg, beaten
3/4 cup chopped walnuts
1 can sweetened condensed milk
3/4 cup brown sugar
1/2 cup butter
24 caramel candies
1/4 cup butter
Mix flour, brown sugar, eggs, 1/2 cup butter and walnuts. Press into a 9-by-13-inch pan, reserving about 2 cups for topping.
Combine caramel candies, condensed milk and 1/4 cup butter over low heat (it burns easily). Stir constantly until melted. Pour over crust and top with remaining crumbs. Press down lightly.
Bake 20 minutes at 350 degrees F until lightly browned.
Diabetic Spicy Refrigerator Pickles
3 medium cucumbers, sliced
1 cup boiling water
2 Tablespoons dark vinegar
1 small onion
3/4 cup unsweetened apple juice or cider
1 Tablespoon salt
2 Tablespoons mixed pickling spices
5 packets Equal
1 clove garlic
Put cucumber slices in a glass bowl, sprinkle with salt and toss.
Cover and refrigerate for 30 minutes. Meanwhile, pour boiling water over pickling spices in a bowl and set aside for 30 minutes.
Rinse salt from cucumbers, drain well. Drain spices, reserving liquid. In a bowl, combine liquid from the spices, apple juice, vinegar and Equal. Add cucumber, sliced onion and garlic. Toss gently. Refrigerate 24 hours before serving. Makes 1 quart.
Broccoli Salad
1 (13-ounce) can water chestnuts
1/2 cup diced cheddar cheese
32 thin slices pepperoni, diced
1 small red onion, diced
2 cups broccoli florets
Dice water chestnuts and pepperoni. Combine all ingredients.
Dressing:
1/4 cup sugar
2 Tablespoons rice vinegar
Mix together and pour over salad.
