Sloppy Joe Cornbread Casserole
From Lacey Hanzlik - Title Paraprofessional
    8.5-ounce package cornbread mix
    14.75-ounce can creamed corn
    2 eggs
    ½ cup milk
    2 cups shredded cheddar cheese, divided
    1½ pounds ground beef
    15-ounce can sloppy joe sauce

Preheat oven to 400 degrees F. Coat a 13-by-9-inch baking dish with nonstick cooking spray. Set aside.

In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes. In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add sloppy joe sauce. Cook for an additional 5 minutes. Spread beef mixture over cornbread and top with the remaining cup of cheese. Bake for an 20 additional minutes. Allow to cool for 5 to 10 minutes and cut into squares.

French Dip Sandwiches

    4 pounds boneless beef roast

    1 package aujus mix
    1 can beef broth
    1 package Italian salad dressing mix
    1 cup water

Place roast in a crockpot, mix other ingredients and pour over the roast. Cook on high for 8 hours. To serve — shred roast beef with a fork. Serve on hamburger buns and serve juice in individual serving dishes to dip sandwiches in.

Blueberry Chills

    24 vanilla wafers crushed
    8 ounces cream cheese (softened to room temperature)
    1 cup whipping cream
    ½ cup powdered sugar
    1 can blueberry pie filling

Place crushed wafers in the bottom of an 8-by-8-inch pan. In a bowl, beat the cream cheese, whipping cream and powdered sugar. Spread over vanilla wafer layer. Top with blueberry pie filling.  Cover and refrigerate until chilled.

Quick Quesadilla   
    1 bag shredded cheese
    1 jar taco sauce
    tortilla shells

Put shell on plate. Spread taco sauce on shell to desired taste. Sprinkle cheese on sauce. Cover with tortilla shell. Place in microwave for 30 seconds or until cheese melts. Enjoy!!

Puppy Chow  
    1 stick butter
    1 package chocolate chips
    1 cup peanut butter
    1 box crispix cereal
    3 cups powdered sugar

Melt butter and chocolate chips. Mix in peanut butter. Pour over cereal and stir until coated. Put powdered sugar in plastic bag. Add cereal mixture and shake until covered. Store in airtight container.
